Honey parfait with mulled wine plums

Creamy frozen honey parfait paired with warm, cinnamon-spiced mulled wine plums – an elegant make-ahead dessert that feels every bit as festive as it tastes.

Method

  1. For the parfait, heat the honey in a pan over medium heat, bring to the boil briefly, then set aside. Whisk the egg yolks and salt in a bowl for about 10 minutes until the mixture is quite firm. Stir in the honey. In a separate bowl, whip the cream until stiff. Fold in the orange liqueur and egg yolk mixture. Grease a loaf tin with oil, pour in the mixture, cover with cling wrap and chill in the freezer for 24 hours.
  2. For the mulled wine plums, pit and halve the plums. Place in a pan with the remaining ingredients and simmer for about 10 minutes to reduce a little. Remove the cinnamon stick. Arrange the plums on top of the parfait and drizzle honey over both to taste. Cut into slices to serve.
