
Indulge in the rich, nostalgic flavours of cherry and chocolate with these easy-to-make Cherry Ripe Cups. A delightful treat with a modern twist, they’re perfect for satisfying sweet cravings or sharing with loved ones.

Method
- Melt the chocolate and half the cacao butter in a saucepan. Allow it to cool slightly.
- Pour 1–2 tsp of the melted chocolate into a small silicon mould. Gently rotate the mould to coat the sides with chocolate.
Repeat for the remaining moulds and set aside in the freezer.
- To make the cherry filling, place the cherries in a small saucepan with a dash of water over a medium heat. Cook for 5 minutes, or until the cherries form a jam-like consistency. Use a stick blender to blend until there are no big chunks.
Mix in the coconut, sweetener, and remaining half of the cacao butter.
- When the chocolate in the moulds has set, remove from the freezer. Carefully spoon the cherry mixture into the cups, leaving a small gap at the top.
- Pour the remaining melted chocolate on top of the cherry mixture in each mould. While the chocolate is still wet, decorate with the raspberries and pistachios, if desired.
- Return the cups to the freezer or fridge for at least 1 hour or until the chocolate is set. Remove the cups from the moulds and enjoy!
