  1. Mix the shallot with the red wine vinegar, sugar, and water. Set aside for 10 minutes to lightly pickle. Drain the shallot, reserving any remaining liquid.
  2. Prepare the dressing by mixing the chopped oregano leaves, capers, and olive oil with the leftover liquid from the shallot.
  3. Place the tomatoes and pickled shallot in a large bowl. Toss with the dressing and season to taste. Top with some extra oregano leaves to serve.
