- Mix the shallot with the red wine vinegar, sugar, and water. Set aside for 10 minutes to lightly pickle. Drain the shallot, reserving any remaining liquid.
- Prepare the dressing by mixing the chopped oregano leaves, capers, and olive oil with the leftover liquid from the shallot.
- Place the tomatoes and pickled shallot in a large bowl. Toss with the dressing and season to taste. Top with some extra oregano leaves to serve.
